Organic beans do not make you gain weight due to their fibre that cleans the intestines. They are an excellent source of potassium, magnesium and iron.
Do not put any salt in the soaking water because it will make their skin hard and the beans will take longer to cook. Once cooked, the beans will keep their flavour for a few days if stored in fridge or frozen. When combined with cereals, legumes bring high quality protein and will enhance the flavour of other foods.
